California Walnut Commission Hold Contest Called "2021 Walnut Bread of the Year"

The California Walnut Commission, of which Japan Representative Office is located in Minato-ku, Tokyo, held a contest called "2021 Walnut Bread of the Year" to determine the most popular walnut bread in Japan.

In the wholesale bakery category, Yataro Group, a company operating bakeries in Shizuoka Prefecture, won the Grand Prize for their "Walnut Anpan", a bread product filled with red bean paste, and Boule Beurre Boulangerie, a bakery in Hachioji City, Tokyo, won the Grand Prize in the retail bakery category for their bread product named "Walnut Pepper."

The Gold Prize in the wholesale bakery category went to "Pasco Special Selection Bitter Coffee & Walnut Danish", of Pasco Shikishima Corporation, a major bread wholesaler headquartered in Aichi Prefecture, and "Moist Walnut Steamed Buns" of the same company won the Excellence Prize in the same category.

In the retail bakery category, the Gold Price went to a bread product named "Jogen no Tsuki", from Amenohemo Kazenohemo, a bakery in Kyoto Prefecture, and the Excellence Prize went to a walnut bread, named, "Noix", from Boulangerie Amonie, in Bunkyo-ku, Tokyo.

"Walnut Anpan" is a product made by wrapping red bean paste with bread dough kneaded with large walnuts before baking. The harmony of the aroma of the walnuts and the sweetness of the red bean paste is the key to this product.

"Walnut Pepper" is a snack bread baked from French bread dough mixed with walnuts and black pepper. It is a perfect snack for beer or white wine.

"Pasco Special Selection Bitter Coffee & Walnuts Danish" is made by rolling homemade coffee cream into Danish dough, topping it with walnuts before baking it, and finishing it with cheese glaze. The balance between the bitterness of the coffee and the sweetness of the milky cheese glaze is the key point of this product, and the savory texture of the walnuts adds an accent to it.

"Moist Walnut Steamed Buns" are made by kneading Sanontou sugar and brown sugar molasses into Japanese wheat flour dough, topping it with walnuts before steaming it.

"Jogen no Tsuki" was developed based on the image of the famous song "Jogen no Tsuki." It is formed into the shape of a crescent moon and baked at low temperature for a long time. The key point is that you can enjoy the crunchiness of walnuts no matter which part you eat.

"Noix" is a bread product baked from baguette dough made from Hokkaido wheat flour. Plenty of walnuts are kneaded into the dough. The dough is fermented and aged for more than 20 hours using home-grown yeast.

Mr. Takeshi Yamamoto of the Japan Institute of Bread Technology, who served as a judge, said, "Freshly baked bread is delicious, but bread that tastes good the next day or later has been fermented well and has been developed in such a way that it does not get boring even after several times of eating. Also, bread that has been baked with carefully pre-treated walnuts will have a strong walnut flavor. It was a very meaningful judging that made me realize the craftsmen's dedication and technical skills."
